When it comes to deserts, nothing beats chocolate mint chip ice cream. That's what I thought, at least, until I found this vegan Mint Cacao Chip smoothie recipe (which I adapted from Cocoa Bliss Smoothie recipe from Whole Foods).
This Mint Cacao Chip smoothie is my favorite "go-to" recipe for when I have a sweet tooth. Better yet, this recipe is made of all natural and wholesome ingredients and is 100% vegan and gluten free.
Ingredients: (Makes 1 Serving)
1/4 Cup Coconut Water
1 TBS Raw Almond Butter
3 Leafs of Kale (Stems removed)
1 Handful of Spinach
3 TBS Cacao Powder
1 TBS Chia Seeds
1 TSP Organic Peppermint Extract
1 TSP Cacao Nibs
1 1/2 Frozen Ripe Banana
5 Ice Cubes
Directions:
1. Add all ingredients except ice and cacao nibs to the to the jar of your high-powered blender and
pulse until coarsely combined.
2. Add ice and continue to pulse until ice is roughly blended.
3. Blend on high
4. Add cacao nibs and pulse on low until combined.
